True Cherry Cupcakes

These Easter Cupcakes look and taste like spring! A light white cupcake is topped with a True Cherry Buttercream. These cupcakes are perfect for any Easter or Spring party.

  • Cupcake Liners
  • Frosting Piping Bag
  • Handheld Mixer

Ingredients
  

  • 1 Box Store Bought White Cake Mix
  • 1 cup Unsalted Butter (softened)
  • 3 cups Confectioners' Sugar
  • 2 tbsp Heavy Whipping Cream
  • 1/3 cup True Cherry Preserves (or more to taste)
  • 1 tsp Vanilla Extract

Instructions
 

  • Bake the cupcakes according to the back of your store bought mix.
  • To make the frosting, cream butter in a bowl with an electric mixer on medium speed until fluffy. Beat in confectioners' sugar gradually until light and fluffy.
  • Beat in heavy cream, 1 tablespoon at a time, until frosting reaches spreading or piping consistency. Mix in cherry preserves and vanilla extract. Pipe the frosting onto the cupcakes.
