The Best Cookie Recipe: Coconut Cherry Oatmeal

Full of nubby oats and plenty of sweet dried cherries, these lightly spiced cookies are pleasingly chewy in the center and crisp around the edges, with a hint of butterscotch from the brown sugar. They keep really well, so you can make them up to a week in advance and store them in an airtight container at room temperature. They’re also great for mailing when a package of cookies is in order. So here’s what you’ll need to make the new and improved oatmeal raisin cookie:

  • Old Fashioned Oats: These are the flat flakey oats, also known as “rolled oats!”
  • Flour: Use all-purpose flour, or you can actually even use gluten-free baking mix in this recipe too!
  • Baking Powder + Baking Soda: To help the cookies rise.
  • Salt: To enhance and balance all of the flavors coming together.
  • Unsalted Butter: Softened. Use two sticks of butter, which sounds like a lot… but trust us.
  • Granulated Sugar: To sweeten.
  • Brown Sugar: To sweeten and give that molasses flavor. The darker the brown sugar, the more the molasses flavor.
  • Egg: For structure of course.

Coconut Cherry Oatmeal Cookies

The classic oatmeal cookie recipe taken to whole new level with coconut flakes, dark chocolate chips, and our favorite… Montmorency Dried Cherries!
Course Dessert
Servings 4 Dozen Cookies

Ingredients
  

  • 2 cups Old Fashioned Rolled Oats
  • 1 ½ cups Flour
  • ½ tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 cup Unsalted Butter (softened)
  • 1 cup Light Brown Sugar (firmly packed)
  • 1/2 cup Granulated Sugar
  • 2 Large Eggs
  • 2 tsp Vanilla Extract
  • 1 ⅓ cups Coconut Flakes (unsweetened)
  • 1 cup Montmorency Dried Cherries
  • 1/2 cup Dark Chocolate Chips

Instructions
 

  • Preheat oven to 350° and line a baking sheet with parchment paper. Set aside.
  • Combine your oats, flour, baking soda, baking powder, and salt in a medium sized bowl. Set aside.
  • In a large mixing bowl, beat your softened butter and sugars until fluffy. Once fluffy, beat in your eggs and vanilla extract.
  • Take your dry ingredients and mix them into your wet. Then stir in your coconut flakes, dried cherries, and dark chocolate chips.
  • Drop dough by the spoonful onto your cookie sheet and bake for 10-15 minutes. Let cool five minutes before transferring to cooling rack.
